SALMON CAKES
What a great way to get in some quality protein by eating fish!! These are tasty and filling and best of all, quick and easy to make.

Ingredients
2 cans (14 – 15 oz each) wild caught salmon or mackerel, drained (I used 2 cans
about 10 oz total)
2 egg
1/4 cup green onions (or a bit of grated onion)
2 tsp dried dill
1 tsp mustard
1/2 tsp coarse salt
1/2 tsp ground black pepper
1/4 cup coconut flour ( i used less, about 1/8 cup)
coconut oil (for frying)
In a bowl combine all ingredients except coconut flour. After everything is mixed, start adding coconut flour a little at a time, stopping when the mixture holds a patty shape.

Melt enough coconut
oil to cover your saute pan, on medium heat. Shape mixture into 3 inch patties. (i used a 1/4 cup measuring cup to make them uniform and got 8 cakes)
Cook in coconut oil until each side is brown. Finish off in a 225 degree oven.
